Q: Does this include the 4 probes?

Yes, four probes are included. Each probe is switch selectable to be 1x or 10x attenuation. Probes are of the type that are clip- on that can be pulled off to become needle point.

Q: Has anyone used the fft function on the gds-1054b oscilloscope and does it provide the ability to read out the frequencies?

Yes it does. After bringing up the FFT math function, activate the cursor. As you scroll the cursor through the FFT, the frequency and magnitude of the FFT at that point along the curve is displayed.

Q: Can this scope decode i2c, spi, rs-232, etc...?

Not on this series of GDS-1000B. SPI requires 4 channels. To do decode, suggest you look at the GDS-2000E series and the GDS-2074E. https://www.amazon.com/GW-Instek-GDS-2074E-Oscilloscope-Technology/dp/B00W7YY3JQ - INSTEK America.

Q: How much different is the button layout on the 1054 than this pictured (1104 ) model?

Your inquiry does not contain a picture of the GW Instek 1104, however, I went to Amazon and found a picture of the 1104. The button/knob layout are identical. I could not see a single difference in the entire front panel layout.
