Not 'instant' to make and does require more additional ingredients
I love trying new food and being a recent gluten sensitive, I now had to find a substitute for my love of 'instant' noodles. So upon the reviews I was sold. However, this is not 'easy to make' as it does require you to have additional ingredients in the house: shitake mushrooms, meat (optional), for example. Also, what I was not expecting was the 'strong' cinnamon component in the soup base: I know cinnamon is good for you, but fragrant wise, it was strong to both my nose and taste buds. I am not sure where the mushroom flavor was going to come from other than when I add additional ingredients like the mushrooms?The rice noodle cooks really quickly and does become 'gooey', so do watch out for that if you do add other ingredients to the pot.

Happy Pho is a success!
This is a very nicely packaged product, with equally good stuff inside. It's great to have a bowl of pho without worrying about what's in it, when you don't have time to make it from scratch yourself. It really makes a lot of pho, too. It says 'serves two', and that would be two very hungry people, because when I make it, I pack the leftovers into 3 more bowls. That dosage is pretty apt for the amount served at a restaurant, tho, lol. I was worried about the varying reviews about flavor, but after tasting it, I think you just have to take it for what it is: preference. The flavor was slightly different from the pho I am used to, but really enjoyable, especially if you add the normal pho accoutrements (Thai basil, lime, cilantro, bean sprouts, hoisin sauce, etc). Maybe if you've never had pho before it tastes weird? I don't know. The great thing is that rice noodles are already gluten free, so they didn't have to try and make something with a familiar gluten-y taste and texture taste 'right.' It's lovely that they are brown rice noodles, tho! Super yum - no one would reject these noodles! Just don't overcook!

It's is a good, healthy product.
Besides what I said above, it is easy to use it as a main meal by adding fresh veggies and protein.

Pretty good for something that's INSTANT
For something that is INSTANT, it's actually pretty good. Note the word, "instant." So no, it's not close to authentic slow simmered pho broth, but for something that's instant, it's a good substitute when you want something fast and not have to drive to a pho restaurant or pull out bones from your freezer (assuming you keep beef bones in your freezer. haha). I love that not only the noodles are brown rice, but that the spice packet is all organic. Very simple and quick to toss together. Cook and prep pretty much like you had a bag of instant ramen that you were trying to fancy up. Throw in your own meats and fixins and there you have it.Each box is a pretty decent hefty serving for two, but I don't exactly eat large portions myself.

Bland!
I ordered this because I mistakenly thought it would be a quick lunch option, like Cup 'O Noodles, except better, of course.I was looking for something hot and satisfying - just add boiling water and you've got a meal.But this is a mix with dry noodles that you have to prepare. You definitely need other things to gowith it, like veggies, tofu or meat, etc. And LOTS of other seasoning and spices, since the packet that comes with it is bland, bland, bland!Too much cinnamon for my taste and even when mixed with veggie broth, needed loads of salt. (And I am not a salt person).Very disappointed. I am now stuck with 5 boxes that have been sitting in my pantry forever.

Who knew you could have great & healthy pho at home!
I love PHO! My kids love PHO! I just didn't realize how much sodium and MSG goes into PHO. It's also hard to make PHO at home.A friend of mine introduced me to Happy Pho. I bought a case of it and now I eat it about twice a week. It's just about as easy to make as instant noodles. Then you add veggies, tofu and other stuff to it for some variety. It's pretty tasty and the spice packet (which doesn't have a ton of salt and msg) is pretty flavorful. My kids wolf it down as well.AND it's healthy. BTW, I've lost 17lbs on a new diet that has included Happy Pho!

Good but must add own broth
This soup is awesome! I will say they are able to keep the sodium low because it suggests to make it with low sodium broth which is not included in the sodium count as it is not in the package which brings the sodium levels up a bit depending on what broth base you use, but still it an awesome tasting soup base! I would like the to sell the seasoning packets separately one day though!

Noodles are great, spice packet is awful.
The noodles are good as long as they are not cooked with the spice packet! The spice packet gave the entire dish an artificial taste and smell (like baby oil - yuck). I had to throw the first batch away and start over. If you are a first-time user, taste the broth after adding the spice packet and before adding the noodles to be sure you can tolerate it.
