Review: So cute and such a crowd pleaser - I got these to use for a holiday tea party. I was a bit nervous that all of the details would not show up as much as I hoped but they all came out beautifully. I used it to make two batches of cake one orange yogurt which was very moist and one cream cheese which was a much thicker batter. I was worried that the moist cake would fall apart but it did not and I was worried that the thicker batter would not conform to all the details which it did with not problem. I did use a silicone brush to coat the pan with coconut oil and then floured the pan to make sure they would come out. I put to much batter in the mold and had to cut the "muffin top" off of the bottom of the cottages and they were literally sliding right out of the mold as I cut the tops off. It worked like a charm! My guests loved how cute the cottages were and they were the perfect size for individual servings. I dusted all of the cakes with powdered sugar as some of the other reviewers said that glazing them hid the cute details of the cottages. I had them arranged on a tray and they looked like a sweet little snow dusted village. I highly recommend and anticipate using these every year.
Review: tiny gingerbread houses - I made two batches of these for tomorrow's family Christmas, so I'll share what works while it's fresh in my mind. I sprayed each compartment with Pam and dusted with flour. I used Trader Joe's gingerbread mix, filled to line (where the "ground" would be for each house). I cooked according to TJ package directions, 350 degrees for 25 min. (checked by inserting toothpick at 20 min and ready at 25 min.) Cooled for ten minutes, then used bread knife to slowly, gently, saw off muffin tops. (I could probably have avoided this by putting less dough in each compartment, but I loved eating those tops :-) Then turned over onto a silicone cutting mat and and -- whew -- all came out well. After they were really cooled, I dusted them with powdered sugar, which made a BIG difference in the appearance. (But don't do that while still warm or it just globs.) Re proportions, I used three packages of mix for two batches, but that included a LOT of BIG muffin tops; might be able to go one for one. Re cleaning, I put the pan back into the oven with water filling each compartment; after water started boiling, I emptied the pan, and not much scrubbing was needed. Used the water sprayer and a toothpick for a few little floury bits stuck at the bottom. So...they taste good and turned out well. VERY important thing to know is that they are TINY. I imagined that we would each decorate our house tomorrow, but that may not happen. One would need teeny tiny candies; I'm guessing that a couple of M&Ms on each side of the roof is about all we'll be able to do. So if you really want a gingerbread house to decorate, you need something bigger, but these are cute and yummy individual treats. Follow-up: we DID actually decorate the houses (my niece brought tiny candies) and adults and kids alike really loved it. I'm making it a new Christmas tradition.

**Q: The cake did not come out of the pan even though I used spray cake came out all crumbled up?**
A: Do not use cooking spray.  Use bakers joy or grease and flour the pan. Also, let the cake cool at least 10-15 minutes before trying to remove from the pan.

**Q: The recipe**
A: Hi I used 2 different recipes, Italian Limoncello Savarin from a dec 1999 issue of La Cucina Italiana, and Dean Brettschneider's Fresh Ginger and Honey Nut Loaf from his Taste book. the fresh ginger loaf was very easy but the Savarin was very lemony and delicious. The ginger houses looked awesome with icing sugar dusted over them as the roof tiles picked up the sugar and looked awesome. I sat them all on a bed of whipped cream with home made lemon curd folded through it so it looked like a field of snow... Great fun and simply divine to eat!

**Q: I would like to make gift boxes for these mini gingerbread houses, can you give me approximate dimensions of how big theses houses are?**
A: I love this pan because the houses are so cute.  The measurements are 3 1/2" x 3 1/2".  If you make a box about 4" wide and high, that should work well since you might want to decorate the houses and that would add a bit more height and width to the finished product.

**Q: do you have a recipe for the cozy village cake**
A: "Betty Crocker Gingerbread Cake & Cookie Mix" - 14.5 oz - 2 pk (sold by Amazon) is the perfect cake mix for this pan.  One box exactly fits this pan.  I use butter to grease each house, and use a pastry brush to get the butter into every house detail. Mix the gingerbread cake mix in a pour spout container (like "OXO Good Grips Batter Bowl" also sold on Amazon) , and just pour the mixture into each house.  Bake for 22 to 27 minutes at 350 degrees, use a toothpick to see if the houses are completely baked.  Let the pan cool for 10-15 minutes, then use a serrated knife to remove the extra cake above the house (and of course - taste it to make sure it has excellent flavor).  Flip the pan onto a cooling rack.  After 30 minutes the houses are ready for frosting, candy decorations and alot of fun.  Makes a terrific Christmas gift!

Yes, for Christmas a gingerbread village is perfect. But think of the haunted houses you could create for Halloween. Autumn scenes for Thanksgiving. Or an Easter Bunny village for Easter. They can be decorated as simply or as elaborately as you wish. You can also use a cake mix if you are pressed for time and the little houses can make a creative centerpiece for a holiday table.
