Best tasting real cheese for lactose intolerant folks!
Doesn't bother me or break out my skin like all other dairy does. Raw is better than pasteurized. Goat has different casein protein than cow milk. This tastes like fresh flavorful cheese to me without a weird taste. It's also filling. I'm addicted. I've missed cheese so much I've already gone through four blocks of this lol. Also redwood hill goat kefir is very good and non reacting for me. So now I can have that dairy in my coffee with stevia :)

Wonderfully Flavorful Healthy Raw Cheese
I'll try my best, but it's hard to explain the deliciously complex flavor of this cheese. I love it and highly recommend it, but everyone has their own expectations and preferences when it comes to buying cheddar.Normally, I really dislike mild cheddar -I guess because whatever I've tried historically has little to no flavor, and I'm a super sharp slap-yo-momma's-face-strong-tangy cheddar cheese lover. Still, I decided to give Laclare a try for the health benefits of raw goat milk (all the enzymes that make it easy to digest the fats/proteins in the cheese and good for you bacteria to improve your gut health... you know, that thing we call our microbiome which is the beginning/end to either good health and disease prevention or inflammation, pain, and all manner of sickness). Plus, I'm a super goat nerd and read the backstory of this family owned farm. Well, this mild/medium cheddar completely changed my mind -the Hedrich family should be darn proud!!!! They are putting out one mighty fine raw cheese.The color is white, as you would expect from raw organic goat cheddar -no unnecessary color additives. The texture is pleasant, medium/smooth -easy to slice or cube and should melt well. It's neither very creamy nor is it dry/crumbly -somewhat reminiscent of a Monterey Jack. The taste is rich and exceptionally flavorful, well balanced. It tastes like a quality cheddar with just a hint of sharpness/tang... it's very subtle. The flavor, though... so good; it tastes like goat cheddar without at all tasting goaty -detected a subtle hint of nuttiness. I also love that it is not overly salted -it has just enough without overtaking the flavor of the cheese.Laclare raw goat cheese is rich/complex enough to add to a cheese board or use for fondue, but it's equally great for salads, sandwiches, burgers, omelettes, or grilled cheese. I like it all on it's own (you might enjoy it with wine). The health benefits of raw goat cheese is phenomenal, and worth the extra money to eat regularly if you can swing it. The only negative to be said is that you must exert some willpower to not eat too much in one sitting. : )

This cheese is amazing and with it being raw you get way more nutritional benefits than pasteurized cheese.

Love this cheese
I am so glad I found this in my local whole foods section. It's a God send for people with A1 protein allergy. Tastes so good and has less of goat mild taste. Please continue to carry this. It does not say on the package to keep it refrigerated. I am hoping I can travel with it if it stays good on room temperature.

Best cheddar I have had. Eating it at room temperature brings out all the nuances of this incredible cheese.
