The King of Knives is Dead, Long Live the Chroma!
I am a kitchen knife hoarder / collector / snob - ever since my Mom bought me a Wusthof Classic Chef's knife I've been collecting knives, from the registry for our wedding, to birthdays and anniversaries, and also "just because." When I saw this Chroma knife on sale on Black Friday for $99, I had to get it. It arrived today, and I used it to chop a stir fry. So how'd it do?The Chroma knife is off the charts good. Perfect - no learning curve and so so sharp. Even though I collect Wusthof knives, for the last six months my go-to knife has been an Ikea Damacus Steel Slitbar knife (I believe now discontinued) that sold for a measly $49. That is a ridiculous deal, but that knife has some shortcomings - because it's Damascus Steel, the edge is sharp, but with a wide rounded edge - if you're not a knife snob that means it will do an excellent job of chopping and dicing, but does not excel at razor-thin vegetable slices, or slices of garlic so thin you can see through them. It also is smooth, which means that even if you succeed in slicing vetables or mean thinly, the slices will stick to the blade, and it is front-heavy, *so* front-heavy like many lower end knives.To slice thin and not have to pull the slice off with your fingers (risky with a sharp knife) you have to have a blade that has some texture above the edge. Most manufactuers do this by grinding hollow depressions above the edge, but I really prefer the Chroma's raised bumps, which are far more effective, especially with frozen meat (I used it to slice partially frozen chicken breasts).This knife looks incredible and is very, very sharp. The balance is absolutely perfect. If you buy it please read the directions carefully and sharpen with a whetstone and do not, I repeat * do not* put it in the dishwasher (as with any quality knife).I am in love.Pros:• Amazing quality - the heft of the steel is just perfect - it is one solid piece, no rivest or welds• Raised dots prevent thin slices from sticking• Design blends form and function perfectly - it looks stunning but is perfectly balanced (my Ikea knife is poorly balanced)• Raised dot on the handle serves the fucntion of the bolster - to keep you hand and the knife balanced• Super-sharp, as sharp as Japanese knives that cost twice as muchCons:• Difficult to clean and maintain properly (but this is the case with all high-end knifes)• Needs special sharpening tools (whetstone)Photos:• Left - my large collection of Wusthof Classic knives• Right - from top to bottom: the "Original" Wusthof eight-inch Chef's knife my Mom gave me that started my obsession, the Chroma P18-HM Type 301 (the new King), and the Ikea Slitbar Damacus Steel knife (the King is dead King)

Workhorse
Full time Chef here.Added this piece to my knife roll and am very pleased. Very balanced and functional. The handle adds enough weight to make the knife work for you. I initially thought the "Pearl" near the bolster would get annoying, but it feels natural. This knife arrives sharp and is a pleasure to use for hours at a time. Quality is on par with knives twice the cost.

Can't rave enough about how great this knife is
I own a few decent knives and I thought this would be more beautiful than functional. It is my favorite knife, stunning in appearance, but a perfect weight, thickness, and functional design/ergonomics that make it a joy to use. Very sharp out of the box, a bit scary actually. And I think this size is the best of the series. Lastly, the price - almost too good.

Beautiful but poor functionality
Looks great and is sharp however the handle is awkward to hold and there is this random ball right where you would grip it with a chefs grib making it uncomfortable to grim. It's beautiful but functionality is poor

Das P-18 ist nun mein fünftes Messer aus der Chroma Typ 301 Serie ind wie alle seine Vorgänger einfach nur perfekt. Verarbeitung, Schärfe und Schnitthaltigkeit sind hervorragend. Es ist perfekt ausbalanciert und liegt ebenso gut in der Hand. Klare Kaufempfehlung von mir. Der Preis ist sicher diskussionswürdig.

Einfach nur ein scharfes Teil, was gut in der Hand liegt und tut was es soll. Lieferung etc. waren auch top.
