I have IBD/Autoimmunity and I tolerated this pasta just fine! Meanwhile regular wheat pasta causes me issues. Einkorn is non hybridized and has a gluten structure that people with autoimmunity may tolerate better. It also tastes just like regular pasta which is another win.
