As someone from Japan, I grew up using Shuokoji in everyday cooking, and I’m so happy I can find it here in the U.S. now! Where has this been hiding?
This is absolutely amazing for tenderizing all meats or for flavoring meat, poultry, fish, or seafood. You need to use very little, 1tablespoon to a pound of meat does the job. While tenderizing it will also carry in the flavors of spices and aromatics. I’m using it almost daily. The main caveat is that you only need a very little. Too much and it will add an unwanted sweetness to most dishes.
