Bought this knife to dress game meat at my farm last year. Very sharp, holds edge well. Easy to clean. Quality German steel, no cheap Chinese garbage here, excellent price for the quality. Liked my first one so much I bought another for home. Recommend highly.

I cannot even tell how much $ I spend it through the years to find sharp kitchen knifes. I came across this company when on vacation in Europe, and I purchased my first small knife from SMI to try it on. I have this knife for 7 years now and it is sharp as the the day I bought it. I was very pleased to find SMI knifes on Amazon, so I added few more larger ones to my kitchen.

I like this knife quite a lot, but do think it is a little expensive. It is light weight and so far has stayed sharp.

As a professional meat cutter, I spend a lot of time with a stiff 6" boner in my hand. Unfortunately, this 7" boning knife has a slightly larger handle than most and I feel like I am sacrificing some control. A coworker with larger hands loves it. The workmanship of the knife is great, and the steel holds an edge well.
