For my next bread making session, however, I think I am inclined to add some extra rice flour to this to further mute the bean like aftertaste in the bread. Can be used in many non gf recipes just by adding xanthan gum. ### ⭐⭐⭐⭐⭐ Great substitute for wheat-based flour, and worth the extra expense *by S***M on June 9, 2018* I make delicious pancakes and biscuits with this chick-pea-based flour and they are gluten-free and healthy. Adding a bit (1/4 teaspoon) of xanthum gum to the recipe is a must or the texture will be unacceptable. Xanthum gum is also gluten-free and one 6-ounce bottle has lasted me over 2 years. You will get an even lighter consistency is you first sift the flour through a strainer, plus you then use a lot less of it. Make sure you get the package with the red label. I was once sent the GF flour with a light blue label, which is the flour made out of rice, not chick peas, and I did not like the results. BTW, check all the offerings for this product because the prices vary widely.
