how will these battery's work with a solar setup?

It really depends on what you're powering with that solar setup. If you're just using such a set up to power and/or recharge small electronics, these will work pretty well. If you're trying to power large appliances or a computer, you need much larger batteries (in terms of Amp hours).

Will these work in a EW 20 ewheels mobility scooter as replacement?

If your scooter requires batteries with the following specks that were provided then they will be what you need. Dimensions: 5.94 inches x 3.86 inches x 3.98 inches. Terminal: F2. It is not reasonable for me to know what your scooter needs, if you don't know what it needs then contact the manufacturer and give them the battery specks and ask them the question.

how would i charge it ?

These batteries can be charged with any 12volt battery charger.

Do these work well with the Moto tech 1000 watt go karts?

They should as we used ours on 1600 watt e-scooters and they worked just fine.
