A very sharp blade but it does need a better, safer handle
Over the years, we have collected a range of good quality, Japanese-made, kitchen knives at home - so I was interested in being able to compare this item on test. The knife arrives in an attractive, well-made box, which doesn't quite shout 'luxury item' because of the rather thin foam packaging around the knife. My first impression was that the Damascus steel patterning was quite subtle along this blade compared to others I use - but once picked-up, it felt well-weighted and comfortable in the hand. Carefully removing the protective plastic tip, I discovered that this knife was extremely well-sharpened - probably one of the sharpest knives 'straight from the box' that I have seen. I was testing the 5" utility/paring knife, so I set to work on a typical range of tasks on the chopping board.... The convex blade structure worked well, giving the usual natural 'non-stick' effect when chopping and the sharpness of the blade remained impressive throughout a range of tasks. My one concern is the natural antler handle... although beautifully finished, I found the material did not give me the grip and control of the knife that I expect when using a razor-sharp blade. Perhaps I have just got too used to using traditional, wooden-handled blades but I did find this horn handle grip far more 'slick' and slippery when used with wet hands. Nevertheless, this is a good, well-sharpened, well-balanced and useful blade in the kitchen. For me, I fear the antler handle is rather too much of a gimmick and, given a safer handle grip, this would deserve a full, 5 star rating.

Razor sharp showpiece knife
The media could not be loaded. Amazing quality Damascus steel chef knife, which had me thinking do I really want to use this in the kitchen or hang it on the wall as a showpiece. The presentation and build quality is at another level, almost on par with that of a Japanese samurai sword.Comes nicely packaged in a black presentation type box with embossed Japanese characters (meaning order lol) and a cardboard sleeve. The blade is extremely sharp and the patterning of the Damascus steel blade is breathtaking, looks a true piece of craftsmanship. The natural antler handle is not to everyones taste (and I certainly do hope it was ethically sourced) but provides a comfortable grip while slicing a variety of meats and vegetables and keeps the overall knife nicely balanced in weight. Despite being shown in the images, it does not come with a sheath (and I can find no reference to saying it should).Very impressive knife with razor sharp cutting that certainly holds its own against another set of Japanese Damascus steel kitchen knives I own in terms of functionality. Where is does pale in comparison is the higher cost when you consider you are only getting a single knife for a price than you would normally pay for a 7 piece Japanese Damascus knife set.

OK but could be better
It’s a nice knife but nowhere near the quality of our cooking knives from Japan. Fit and finish is ok. More a £100 knife than a £200 knife.

Wha…??
The manufacturer of this knife is: yang jiang shi tong shun xing mao yi you xian gong siThat is literally the company’s name according to their Amazon shopfront.I don’t believe it was made in Japan and I don’t believe it’s genuine Damascus steel - it is too heavy for that. To me it looks and feels like it’s just been hammered to give the appearance. It arrives looking fancy - the outer box has a kraft card “ribbon” which is hard to remove - but the knife itself just doesn’t feel special, or genuine.I have a £25 paring knife from Kimura which is just as sharp, if not sharper. This is fully 8 times the cost! It’s inexplicable. Unless the price is to cover the antler handle - but I don’t see why that would add value. If anything I expect a bunch of us would get the knife in spite of the handle.I’m really curious to see if it rusts - if it’s real Damascus steel it shouldn’t. I’ll update this and and when but, suffice it to say, given the choice I would pick another £25 Kimura over this £200 Sunlong.

Mind your fingers
Oh my word, it’s like slicing through butter, it is very very sharp.I have never had a knife like it but then I’ve never had a knife worth this much money before. It is definitely worth the money though, you know this will last for years if you look after it.It comes very well presented in a gift box.We had a friend stay over this weekend who is a chef and he said it was an excellent quality knife and to sharpen it you need to use a whetstone. It has a good weight to it and feels solid in the hand.Ultimately it cuts beautifully and cleanly and I am not a good enough cook to be using this but I will continue to practice.

Expensive, impressive
For the cost this is kinda falls somewhere into the realm of "art display piece" alongside "functional kitchen knife". The Damascus steel certainly adds a lot of visual flair to it, as well as the bone/antler handle, and as you might imagine, it cuts really quite effortlessly too; fruits, vegetables and meats are no match for the edge on this at all. It has good balance, build quality, heft and a sharp edge which can be re-sharpened. There is that price tag to bear in mind, although there's no question it's a quality item in every respect.

One awesome knife
This is an awesome knife. Start off with a nice box…so think a very nice present. The box does not cut so let’s move on…Beautiful looking item. I do like the handle. Lovely feel, lovely weight. It is expertly melded into the blade. The blade is one of the lovely looking rippled look. Really nice.Size is just as you want it. Big enough without being too big. This can slice without being. bread knife size.As for cut….be careful. It’s sharp…very. Keep people who don’t understand the concept of sharp knife well away. This piece cuts everything. As a tip, watch a few YouTube videos on cutting with a decent knife on rolling the cut. It just beautifully cuts.Let’s be honest, not cheap. Then realise you need to look to see if it’s actually worth it. Think of cars…some cost more because they are better…Lovely knife, just be careful…it’s sharp.

So, you want a relationship, do you? Look no further
Is there a perfect woman? Is there a perfect man? Uh, no, not living today, at least. This is no cookie cutter, "all are alike coming off the line", knife. I have other Damascus knives, and in truth, really do love them. To varying degrees, they are all of them superior to my standard "German steel" as a category, even if from Sweden, etc... which was my previous norm.Truly, the variety to be found here, as well as cost spectrum, is vast and almost without limit. From simple, traditional and fairly uniform in production; to the most intricate and custom commissions, it's as if the sky is the limit. For the cost here, as we begin to enter into a category where it is less about "value", and more about what is your appreciation and perceived value, what you will find is no longer something that "meets expectations", in that it's just as you envisioned it. More, it is as a future bride or husband. You have some ideas as to what you might delight in, yet until you actually enter into that relationship, it's never exactly as you envisioned. Moreover, it is also not perfect, and surely this knife here is not. I went with the Santoku style, as I was looking for a knife for my set for slicing wet items, adhering items, etc... Onions, cucs, etc. Obviously, this will do exceedingly more than this, but the vented sides are what I was after, and in this I was not at all disappointed.I have included some photos of the product, and I tell you, it is not perfect, except and in as much as its imperfection can indeed make it perfect. The handle is curved, and being antler this is no surprise. The blade itself actually is not perfectly straight. In truth, were I a left-hander, I would likely return this immediately. Being a right hander, as the blade curves away from my fingers and beneficially into my site line, this is much the more acceptable. In the end, I actually begin to really like it more for this deviation, and this is what I mean about a relationship and the unexpected. How many husbands and wives love not their spouse's "perfections", but adore their imperfections all the more? Many, that is certain. The blade itself is also not close to "flawless", and yet for all of its rawness in certain parts, I love it the more. It's not run off of some machine, with a mindless burr forcing the edge. Rather, it has all the imperfection of a true blacksmithed item. At least, that is the impression I have at the outset. The edge is eagerly sharp and very quick to do its business. It holds its edge and frankly, is the sharpest knife I had shipped and in initial receipt. It's a bit ugly and beautiful at the same time.Could it be better? Of course. Is it worth the price? Each individual will have to decide that on their own. It's within the realm. For me, it simply works for now. If I had received the next one on the line, with perhaps a different slant in edge, slant in handle, etc... I might have not enjoyed it at all. In truth, two months down the line, I might learn something I don't appreciate, enough to cause me to move on. Again, a relationship. Yet, one I have hope for, and am glad to have in the arsenal for now.

A éviter absolument !!
