Can this unit be used in a boat application?

You should be able to do that provided 1) there is a source of diesel fuel and 2) you route the burner exhaust to a safe location. In automotive applications the exhaust is routed below the vehicle and directed backwards similar to the engine exhaust. There are limitations on the length of exhaust ducting (more accurately on the pressure drop creating back pressure).

Is the fuel pump silent / consistent or does it “click” during operation like many of the other models on the market?

This is the newer model of webasto heater this year, it does click like all other models as there is no constant flow fuel pumps on heaters anywhere, however this new model does have a much quieter fuel pump then in previous models
