Can this attachment be used for any kitchen Aid mixer or it for newer models only? Mine is really old but works great and would love this attachment.

I have a 12 year old KA Professional 600 6qt and it works beautifully. I LOVE this attachement. This and the spiralizer are used almost daily. At first I had a bit of trouble with zuchini and then I read the directions... and all went well.. huh, reading the directions...Go Figure...LOL

Has anyone had success with eggplant?

Sorry...haven’t used it for eggplant yet...sounds like something worth trying!

Could this possibly be used to cut meat (like beef for jerky) if the meat was frozen or semi-frozen so it is firm?

I really doubt it - the blade is intended for soft things like veggies, and would not cur thru grainy meats even of frozen or "stiff"like semi-frozen it doesn't have the backbone in the blade that you would need to slice thru the meat without deflecting - nice idea
