Does anybody know which psi/flow rate is let through when the regulator is full-open? i can't find it anywhere

These aren’t very precisely made I don’t think there is any flow rate that you’re going to establish for every unit. It is going to vary.

can the barb be removed and if so what is the thread underneath?

The Barb is Press-fit in tightly - You may be able to heat it up and pull it out and Tap the Bore with a small Tap but that may damage the device for trying if your not careful and use the correct size Tap for the Bore Hole which I cant tell you what that might be so..... "your on your own kid for trying" ---- Better order two to be safe.....
