Isn't blue #1 made from Petroleum?

Is this the kind of syrup I could use to make lavender lattes?

I believe you could, not sure what all goes into lattes. But, I have used it for lavender lemonade and lavender tea.

How thick is this? Is it liquid-y like water, or thick/thicker than maple syrup?

It's pretty much a sugar syrup. So not liquidy like water, but not as thick as maple syrup.
