A perfect pressure canner.
No complaints, works as expected, hold 16 pints. Easy to use, much better value than the other major brand, and works on an induction cooker.

Reliable, easy to use and clean, big capacity
I replaced an old pressure cooker. I’m so glad I did! I had no idea how much better this one would be. It’s quite large at about 15in across, in fact you’ll want to make sure you have a kitchen burner large enough to support this thing. The pressure went to 15 psi quite quick on the induction burner I use. Be aware, the product manual specifically states it cannot be used with a propane “ turkey cooker”. It’s easy to clean including the seal. A simple elegant design, no frills but I think it will last me decades. A bit more expensive than I was hoping but after using it I think it’s a good value.

18 psi for grain spawn
That you put three quarters on top of the jiggle weight to make her purr at 18 psi, make sure your grain spawn is fully cooked aka pasturized. Also make sure to purchase a NuWave II induction cooktop cooker where you can program times for cooking etc it's good to see that out of a lot of things in this world this product has actually increased in value from 123 to now 180 since 2020 100000/10 quality, ease of use, build structure, appearance, noise level, weight, fit, it was a great value of money then and still is now!

Yes you can
Works flawless. I wish that I did not have to buy the adjustable weight separately. I have another more expensive brand in the same size that does not work with Induction, but I seem to like both of these the same. I used it on my GE induction stove. I prefer the induction stove over other stoves because for daily cooking, it is very fast and easy to control. The presto pressure canner started boiling about 2" of water and 7 jars in about 15 minutes. My camp chef stove has two big burners and boiled it in about half the time. I have no idea how your gas stove would compare. I have never owned an indoor gas stove. This pressure canner is all I need. The expensive one does not have anything that I consider a deal breaker over this one. I got this one because I had to have induction. Now that I can cook on gas outside, I prefer to keep the heat outside, the noise outside, and the steam outside. But now I have two canners that I could probably use at the same time, so it is all good I suppose.

OK, but ours has a rust problem on steam outlet.
Works well on our induction stove. Heats quickly and is great for canning. The only complaint is that it rusts very quickly around the steam outlet and needs constant cleaning to remove rust. Our regular canner is years old and does not have this problem.

Induction compatible!
After going from an electric to an induction stovetop (LOVE IT), my old canner had to be retired for a canner that was induction compatible. This Presto 23 quart was the only induction compatible canner I could find. It worked perfectly on my stovetop and holds 7 quart sized mason jars. I did purchase two canner plates separately because when I am canning with pints and half-pints, I can stack two levels of jars in the canner, allowing me to preserve up to twenty jars at once. I also like that the canner lid has an arrow that you match up with an arrow on the canner rim and then turn clockwise to a tight seal. My old canner was a pain to get the lid and the bottom on right. The canner comes with a pressure guage and a 15 lb pressure weight that will wobble during the canning process, letting you know that the pressure is building. It also acts as a safety and will pop off to release pressure if the canner exceeds the maximum pressure (and mine never has). With the large capacity, the safety features, the induction capability, and the ease of locking the lid tightly into place, I am really liking this product.

Fantastic Induction Canner – My Favorite Canning Tips
New to canning, I’ve had this canner only 4 months, but have used it multiple times to pressure can carrots, collards, green beans, chicken stock, tomatoes, and tomato sauce. I have a Bosch Induction Range, and this Presto canner is fantastic on induction. It holds a double rack of pints, and a single layer of quarts. Also, the recommendation to purchase the “Presto 50332 Canner Pressure Regulator” for this canner is spot-on. I couldn’t pressure can without it. Instead of constantly watching the dial, you simply listen for the jiggle, which makes it possible to pressure can while you do other things in the kitchen or nearby. I have a few favorite tips to share for those new to canning: 1) Read your canner manual and watch youtube videos on pressure canning, then make a list of steps and type them out. You’ll find this handy each time you can. 2) Use verified and safe canning recipes only. Internet recipes are sometimes unsafe. The Ball Blue Book of Canning and Preserving 2020 gives lots of recipes, safety advice, and how to’s. My 2nd go-to is the National Center for Home Food Preservation, online. 3) After filling your jars and removing air bubbles, *always* wipe the jar rims with a clean damp cloth. Even a tiny bit of food will prevent your jars from sealing. 4) The first couple times you pressure can, keep notes. To bring your canner up to steam, then up to pressure, you must set your burner on the highest setting possible. But you don’t want to leave it at that high setting throughout. Once you achieve pressure (either via your gauge or the ‘jiggling’ of the weighted regulator (with the proper weight) mentioned above, begin turning your heat down in increments every few minutes. When the canner looses proper pressure or the regulator stops jiggling, turn your heat back up a bit until you’ve reached pressure again (and stop your processing time!). This way, you know the lowest burner setting to maintain pressure, and how quickly/slowly you should go in turning the burner down to that setting. Make notes, and keep them in your step by step list. Allowing your burner to stay on the highest setting throughout will cause you to lose liquid in your cans and your canner, and it’s easier on your glass cooktop to use the lowest setting that will still maintain pressure. Canning is far easier than I imagined, and I’m hooked! Happy canning!
