The only obstacle before ordering this sauce is, does it contain traces of MSG in yeast extract and whether it is absolutely gluten free ?

Yeast extract is not another form of MSG (mono sodium glutamate). There is only one form of MSG and that is MSG. Yeast extract, however does contain glutamates... but so does bread and roast tomatoes. Glutamates are a naturally occurring amino acid. If you want to avoid them you probably should stop cooking your food. Also give up just about everything fermented. No soy sauce either and you should not bother with fish sauces, oyster sauces, anchovies or even pizza. Glutamates are not related to gluten other than they share some letters of the alphabet.

What's difference between the red or green oyster sauce?

I have always used green oyster sauce, but I would say the ingredients may be a difference in taste, sweeter.

This is the most amazing ingredient! I use it in all my Asian dishes and even in others where I want to boost the umami flavor. There’s a lot in this jug, but I prepare lots of Asian dishes so I appreciate the economy of its size. Just remember that it must be refrigerated after opening so make sure you have room in your fridge!
